I know this is seasonings/garnish related, but I wish someone would have told me when I first started cooking as a teenager, to use a fucking meat thermometer

It's the most used item in my kitchen. No more cutting it open to see how well done something is and when you do that, the juices get released.

Yup, such a valuable tool.

If you harvest your grocery store bought whole chicken(best value) make sure to save the bones in the freezer. Makes the best stock.
Ditto for shrimp shells for fish soups and gumbo.

Andrew Zimmern is a legend at such things. Just Google some of his basic stocks.

Two cutting boards can make the kitchen flow work more efficiently.

Sharp knives are a must.

Season with authority.

Always have lemons and limes around.

yes and no.. camp fires aren't gas. LOL. But I get what you are saying. You probably don't want to use it on an electric range. Then again I question why anyone would want an electric range. But they are awesome for baking too. Corn bread or pies baked in a cast iron skillet... that is Americana right there.

Anyone remodeling the kitchen….refrigerator drawers!

I’d buy all my refrigerator space in the drawers before ever buying a refrigerator again!

And get drawers for a freezer too!

The space taken up for a refrigerator, as a matter of fact, the same form factor, should be used to store dishes and pots and pans! And the regular cabinet space should all be the refrigerator drawers!

Three things that make the difference between restaurant food and home cooking.

Salt
Fat
Heat

Get your pans blistering hot depending on the preparation. Don't be shy with either salt or fat. And yes. Good sharp knives are a must.
